Ingredients

  • 500 g Fresh whole-wheat linguine
  • 250 g Lean bacon lardons
  • 100 g White onion (Finely chop)
  • 350 g Zucchini (Halve and cut into small cubes)
  • 3 el Light crème fraîche
  • 60 g Grana Padano (Plus extra for serving)
  • 1 el Olive oil
  • Fresh flat-leaf parsley (To taste; for serving)
  • Pepper (To taste)
  • Salt (To taste)
  • Garlic powder (To taste)
  • Rosemary (To taste)
  • 6 el Pasta water (Optional; use to thin the sauce)

Steps

  1. 1

Heat a frying pan and fry the bacon lardons without oil for about 2 minutes.

  2. 2

Finely chop the onion and add it to the pan. Fry the onion together with the bacon for 5–7 minutes. Then remove the bacon and onion from the pan and set aside.

  3. 3

Halve the zucchini and cut it into small cubes.

  4. 4

Heat 1 tbsp olive oil in a frying pan. Add the zucchini cubes and season with pepper, salt, garlic powder, and rosemary.

  5. 5

Fry the zucchini for 5 minutes.

  6. 6

Blend the zucchini with the crème fraîche until smooth. Add pasta water if desired; this will make the sauce thinner.

  7. 7

Bring a pan of water to the boil and cook the linguine according to the package instructions. If desired, reserve 6 tbsp of the cooking water for the sauce.

  8. 8

Briefly reheat the cooked pasta and zucchini sauce together in a pan.

  9. 9

Add the bacon and Grana Padano, and stir everything together well.

  10. 10

Serve with extra Grana Padano and fresh flat-leaf parsley.
