Ingredients
- 2 lb Red potatoes (washed and cut into 1-inch chunks)
- 12 oz Mountain Dew soda (one standard can)
- 4 tbsp Butter (melted)
- 0.25 cup Brown sugar (packed)
- 1 tsp Garlic powder
- 0.5 tsp Smoked paprika
- Salt (to taste)
- Black pepper (to taste)

Preheat your oven to 400°F (200°C). Grease a large baking dish or cast iron skillet with butter or non-stick spray.

Wash the red potatoes and cut them into roughly 1-inch chunks. Place the potatoes into the prepared baking dish in a single layer.

In a small mixing bowl, whisk together the melted butter, brown sugar, garlic powder, smoked paprika, salt, and black pepper until well combined.

Pour the butter and spice mixture over the potatoes and toss them thoroughly to ensure every piece is evenly coated.

Pour the entire 12-ounce can of Mountain Dew over the potatoes. The liquid should come about halfway up the sides of the potatoes.

Place the dish in the preheated oven and bake for 40 to 45 minutes. Halfway through the cooking time, stir the potatoes to ensure they cook evenly and are well-basted in the reducing liquid.

Continue baking until the potatoes are fork-tender and the Mountain Dew has reduced into a thick, syrupy glaze that coats the potatoes. The edges should be slightly caramelized and golden brown.

Notes
The citrus notes and high sugar content of the Mountain Dew act as a tenderizer and a glazing agent. If you don't have red potatoes, Yukon Gold potatoes work as a great substitute due to their waxy texture.
