  • 70 ml water (60-80 ml, warm)
  • 1 cup milk (for matcha)
  • 2.5 tbsp maraschino cherry juice (2-3 tbsp)
  • 2.5 tbsp whipping cream (2-3 tbsp)
  • sprinkles (for matcha garnish)

Steps

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate medium bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.

    Pour the wet ingredients into the dry ingredients and gently mix with a spatula or whisk until just combined; do not overmix, as a few lumps are acceptable.

    Quickly fold in the 1/3 cup of rainbow sprinkles, being careful not to over-stir so the colors do not bleed into the batter.

    Let the pancake batter rest for 5 minutes while you preheat a non-stick pan or griddle over medium-low heat.
