Ingredients

- 3 tbsp sugar (granulated)
- 2 tbsp baking powder
- 0.5 tsp salt
- 2 eggs (large)
- 1.5 cup milk (for pancakes)
- 4 tbsp butter (melted)
- 1.5 tsp vanilla extract
- 0.33 cup rainbow sprinkles (for pancake batter)

- 1.5 tsp ceremonial matcha (1-2 tsp)
- 70 ml water (60-80 ml, warm)
- 1 cup milk (for matcha)
- 2.5 tbsp maraschino cherry juice (2-3 tbsp)
- 2.5 tbsp whipping cream (2-3 tbsp)

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In a separate medium bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and gently mix with a spatula or whisk until just combined; do not overmix, as a few lumps are acceptable.

Quickly fold in the 1/3 cup of rainbow sprinkles, being careful not to over-stir so the colors do not bleed into the batter.

Let the pancake batter rest for 5 minutes while you preheat a non-stick pan or griddle over medium-low heat.

Cook the pancakes on the heated pan until bubbles form on the surface, then flip and cook the other side until golden brown.

Notes
For the cherry cold foam, you can substitute the maraschino cherry juice with strawberry syrup if preferred. Letting the pancake batter rest is key for a fluffier texture.
