Ingredients

  • 8 oz imitation crab (shredded with two forks)
  • 8 oz cream cheese (softened)
  • 0.25 cup kewpie mayo (plus more for drizzling)
  • 0.25 cup green onion (chopped, plus more for garnish)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sweet chili sauce (plus more for drizzling)
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 3 cup white rice (cooked (from about 1 cup dry))
  • rice vinegar (to taste, for seasoning the rice)
  • 1 tsp rice seasoning (such as Furikake)
  • 2 cup mozzarella cheese (shredded, divided)
  • cooking oil (for greasing the baking dish)
  • wonton wrappers (cut in half for chips)
  • avocado oil spray (for wonton chips)
  • sriracha (for garnish)
  • hoisin sauce (for garnish)

Steps

    Preheat your oven to 350°F (175°C).

    Shred 8 oz of imitation crab using two forks and place it into a large mixing bowl.

    Add 8 oz of softened cream cheese, 1/4 cup Kewpie mayo, and 1/4 cup chopped green onions to the bowl with the crab.

    Season the mixture with 1 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp sweet chili sauce, 1 tsp garlic powder, and 1 tsp black pepper.

    Mix all the ingredients together thoroughly until well combined.

    Lightly grease a baking dish with a little bit of oil.

    Spread 3 cups of cooked white rice evenly along the bottom of the prepared baking dish. Season the rice with a splash of rice vinegar.

    Sprinkle 1 tsp of rice seasoning (Furikake) over the rice layer.

    Add a layer of shredded mozzarella cheese (about 1 cup) over the rice.

    Spread the crab mixture evenly over the cheese layer.

    Top with the remaining 1 cup of mozzarella cheese.

    Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.

    While the sushi bake is in the oven, cut wonton wrappers in half and place them in a single layer on an air fryer tray.

    Spray the wonton wrappers with avocado oil and air fry until crispy and golden brown.

    Once the bake is finished, drizzle with extra Kewpie mayo, sriracha, sweet chili sauce, and hoisin sauce.

Notes

The wonton chips provide a necessary crunch to contrast the creamy sushi bake. You can adjust the spice level by adding more sriracha to the final topping.
