Ingredients

  • 3 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.75 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 8 tbsp salted butter (softened)
  • 1 cup granulated sugar
  • 0.5 cup dark brown sugar (less if you prefer)
  • 2 tsp vanilla extract
  • 2 eggs (beaten)
  • 13.5 fl oz coconut milk (1 can)
  • 1 cup grated coconut (or coconut flakes; more if you like)

Steps

    Preheat your oven to 350°F (175°C) and grease a baking dish.

    In a large bowl, combine the dry ingredients: 3 cups all-purpose flour, 1 tablespoon baking powder, 3/4 teaspoon salt, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground nutmeg.

    In a separate bowl, combine the wet ingredients including the sugars: softened butter, 1 cup granulated sugar, 1/2 cup dark brown sugar, 2 teaspoons vanilla extract, 2 beaten eggs, and 13.5 fl oz coconut milk.

    Gradually mix the wet ingredients into the dry ingredients until well combined.

    Fold in 1 cup of grated coconut or coconut flakes (and optional rum or raisins if using).

    Pour the batter into the prepared greased baking dish.

    Bake at 350°F for about 40 minutes, or until it passes the clean knife test (a knife inserted into the center comes out clean).

Notes

You can also add rum and/or raisins if you like. The author notes that sugar is considered a wet ingredient for the purposes of mixing.
