Stuffed Pizza Waffles

Ingredients
- 275 g pizza dough
- 100 g tomato purée
- 0.5 tsp dried oregano
- 0.5 tsp dried basil
- 0.25 tsp dried rosemary
- 0.25 tsp garlic powder
- salt (to taste)
- pepper (to taste)
- 25 g sun-dried tomatoes in oil (drained)
- 25 g roasted peppers (jarred, drained)
- 40 g shredded mozzarella
- 0.5 tbsp olive oil (for greasing the waffle iron)
- 1.25 g fresh basil

Prepare all ingredients. Preheat the waffle iron.

Roll out the pizza dough and cut into equal-sized rectangles (approx. 9 x 15 cm, depending on the size of the waffle iron). For 2 servings, there should be 4 rectangles.

For the tomato sauce, mix the tomato purée in a bowl with oregano, dried basil, rosemary, and garlic powder. Season with salt and pepper to taste.

Cut the sun-dried tomatoes and roasted peppers into small pieces.

Spread some tomato sauce on one half of each dough rectangle, leaving a border. Top with mozzarella, pepper pieces, and sun-dried tomatoes.

Fold the other half of the dough over and press the edges firmly to ensure the filling does not leak out.

Grease the waffle iron with a little olive oil. Bake the stuffed dough pockets one after another in the waffle iron until golden brown and crispy (approx. 3-5 minutes, depending on the heat).

Garnish the pizza waffles with fresh basil and serve warm.
Notes
The size of the dough rectangles should be adjusted to your own waffle iron. Make sure to seal the edges well so that the cheese does not leak out during baking.
