Russet potato halves are partially cooked until fluffy, chilled to firm them up, then air-fried with seasoning, butter spray, and Parmesan until deeply golden and crisp. Chilling the potatoes overnight makes the final crust especially crunchy.

Weights are estimates. Together, the ingredients weigh about 1.25 kg before cooking, which is about 155 g per serving.
Steps
Wash and rinse the potatoes thoroughly, then pat them completely dry. Dry skins will brown and crisp more effectively.
Cut each potato in half lengthwise through the center, creating eight potato halves.
For the first cooking stage, arrange the potato halves cut-side down in the basket of an air fryer. If using an oven, place them cut-side down on a lightly sprayed sheet pan.
Lightly spray the cooking surface and the potato skins with butter spray or oil. Sprinkle the potatoes with part of the salt, pepper, and garlic seasoning.
Cook at 350°F (180 °C) (175°C (350 °F)) for 25–30 minutes, until a knife or fork slides easily into the potatoes and the centers are tender.
Remove the potatoes and let them cool completely. For the best texture, refrigerate them overnight before the final crisping stage.
When ready to serve, preheat the air fryer to 390°F (200 °C) (200°C (400 °F)). Arrange the chilled potatoes cut-side up in the air-fryer basket without overcrowding them.
Season the cut sides again with the remaining salt, pepper, and garlic seasoning.
Spray the cut sides generously with butter spray or oil so the Parmesan will brown and form a crisp crust.
Shake or sprinkle the grated Parmesan over the cut surfaces, distributing it in an even coating.
Air-fry at 390°F (200 °C) (200°C (400 °F)) for 20–25 minutes, until the Parmesan is golden brown and the potato edges are visibly crisp. Serve immediately with your favorite dipping sauce.
Notes
The potatoes can be cooked through the first stage and refrigerated overnight, then finished to order. Avoid overcrowding the air-fryer basket so the Parmesan crust can brown and crisp. The source suggests serving with a favorite dipping sauce.
