Leftover Asado Empanadas

Ingredients
- 500 g Leftover asado (Grilled meat chopped very finely; may include chorizo)
- 500 g White onion (Chopped; same weight as the meat)
- 2 tbsp Vegetable oil (For sautéing)
- 1 tbsp Sweet paprika
- 1 tsp Dried oregano
- 2 Hard-boiled eggs (Chopped)
- 100 g Mozzarella cheese (Shredded (optional))
- 12 Empanada wrappers (Dough discs for empanadas)
- 2 tbsp Milk (For brushing the dough)
- Lemon (For serving)

Chop the leftover asado (meat and chorizo, if any) into very small, uniform pieces.

Chop the onion into small cubes. The amount of onion should be equivalent to the amount of chopped meat.

Heat a saucepan with a little oil and sauté the onion until translucent.

Add the chopped meat to the saucepan with the onion. Cook over medium heat so the meat hydrates with the onion juices.

Season with paprika and oregano. Cook everything together for about 10 minutes.

Turn off the heat and let the filling cool completely.

Once the filling is cold, add the chopped hard-boiled egg and the shredded mozzarella cheese. Mix well to combine.

To assemble the empanadas, moisten the edge of a dough disc with water, place a generous portion of filling in the center, and close by pressing the edges together.

Perform the 'repulgue' (crimping) by successively folding the edge of the dough inward until the entire empanada is sealed.

Place the empanadas on a lightly floured baking sheet.

Brush the surface of the empanadas with a little milk (or beaten egg if preferred).

Bake at 180°C (350°F) for approximately 20 minutes or until the dough is golden brown.

Serve hot with a few drops of lemon juice to taste.
Notes
It is essential to let the filling cool before assembling the empanadas to prevent the dough from breaking. If you don't have mozzarella, you can omit it. Using milk for brushing is an excellent substitute if you don't have eggs available.
