Ingredients
- 7 oz center-cut salmon fillet (premium, sliced to create a pocket)
- 0.25 cup lump crab meat (picked through)
- 5 shrimp (small, peeled and deveined (plus extra for topping))
- 2 tbsp cream cheese (softened)
- 1 tbsp Parmesan cheese (finely grated)
- 1 tbsp extra virgin olive oil (or melted butter)
- 0.25 tsp garlic powder
- 0.25 tsp Old Bay seasoning
- fresh chives or parsley (finely chopped for garnish)
- salt (to taste)
- freshly cracked black pepper (to taste)
Steps

Prepare the salmon by slicing a deep pocket into the side of the center-cut fillet, being careful not to cut all the way through.

In a small mixing bowl, combine the softened cream cheese, finely grated Parmesan cheese, garlic powder, and Old Bay seasoning until smooth and velvety.

Gently fold the lump crab meat and the 4-5 small shrimp into the cream cheese mixture until evenly distributed.

Stuff the prepared salmon pocket to capacity with the crab and shrimp filling.

Season the outside of the salmon fillet with salt and freshly cracked black pepper to taste.

Heat the extra virgin olive oil (or butter) in a skillet over medium-high heat.

Sear the salmon fillet until the exterior is golden and flawless, and the seafood filling is cooked through.

While the salmon cooks, blacken the extra topping shrimp in the same pan or a separate small skillet.

Top the cooked salmon with the blackened shrimp and a fresh shower of finely chopped chives or parsley before serving.
