Homemade Honey Walnut Shrimp

Ingredients
- 1 lb shrimp (peeled and deveined)
- 0.5 cup cornstarch (for coating)
- 1 egg white
- salt (to taste)
- pepper (to taste)
- 0.5 cup mayonnaise (preferably Kewpie)
- 2 tbsp honey
- 1 tbsp sweetened condensed milk
- 0.5 cup walnuts (candied)
- vegetable oil (for frying)

In a bowl, season the shrimp with salt and pepper. Add the egg white and mix to coat, then toss the shrimp in cornstarch until evenly coated.

Heat vegetable oil in a wok or deep skillet to 350°F (175°C). Fry the shrimp in batches for 2-3 minutes until golden brown and crispy. Remove and drain on a paper towel-lined plate.

In a separate mixing bowl, whisk together the mayonnaise, honey, and sweetened condensed milk until smooth.

Add the fried shrimp to the sauce bowl and toss gently until every piece is thoroughly coated.

Serve immediately, topped with the candied walnuts.
Notes
For the best texture, serve immediately after tossing in the sauce so the shrimp remains crispy. If you cannot find pre-made candied walnuts, you can quickly toast walnuts in a pan with a little sugar and butter.
