Ingredients

  • 8 oz cream cheese (softened)
  • 0.5 cup Green Goddess Dressing (divided)
  • 4 spinach-flavor flour tortillas (10-inch)
  • 4 cup baby spinach
  • 4 oz smoked salmon (skin removed, broken into chunks)
  • 1 cucumber (peeled (if desired), seeded, and chopped (about 2 cups))
  • 0.333 cup red onion (slivered)

Steps

    In a small bowl, stir together the softened cream cheese and 1/4 cup of the Green Goddess Dressing until well combined.

    Lay the spinach tortillas flat and spread the cream cheese mixture evenly over the surface of each tortilla.

    Layer the baby spinach, smoked salmon chunks, chopped cucumber, and slivered red onion over the cream cheese mixture.

    Drizzle the remaining 1/4 cup of Green Goddess Dressing over the fillings.

Notes

For a milder flavor, you can substitute the smoked salmon with thinly sliced lox-style salmon.
