Ingredients
- 0.5 cup Ghee (clarified butter)
- 1 cup Semolina (Sooji/Rava) (fine grain)
- 2.5 cup Water (boiling)
- 0.75 cup Sugar (adjust to taste)
- 0.5 tsp Cardamom powder (freshly ground)
- Cashews (chopped, for garnish)
- Raisins (optional)
Steps
- 1
In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.
- 2
Add the semolina to the ghee and roast, stirring continuously, until it turns a light golden brown and releases a nutty aroma.
- 3
In a separate pot, bring the water to a boil. Carefully pour the boiling water into the roasted semolina, stirring constantly to prevent lumps from forming.
- 4
Reduce the heat to low, cover the pan, and let the semolina cook for 2-3 minutes until it absorbs the water and becomes soft.
- 5
Stir in the sugar and cardamom powder. Continue to cook and stir until the sugar dissolves and the halwa thickens to your desired consistency.
- 6
Garnish with chopped cashews and raisins before serving warm.
Notes
Ensure you stir constantly while adding water to avoid lumps. You can adjust the amount of sugar based on your sweetness preference.
