Ingredients

  • 1 lb chicken feet (cleaned and nails removed)
  • 2 inch ginger (sliced into rounds)
  • 4 garlic (cloves, smashed)
  • 3 green onions (whole stalks, bruised)
  • 10 cup water (or enough to cover the feet by 2-3 inches)
  • 1 tbsp apple cider vinegar (helps extract minerals and collagen)
  • salt (to taste)

    Thoroughly rinse the chicken feet under cold water. If the yellow outer skin or nails are still attached, blanch them in boiling water for 5 minutes, drain, and then peel off the skin and clip the nails with kitchen shears.
