Bourbon Butter Ribeye Bites with Silky Mashed Potatoes and Broccolini

Ingredients

  • 1 lb ribeye steaks (cut into bite sized pieces)
  • Salt (to taste)
  • freshly cracked black pepper (to taste)
  • 0.25 cup bourbon (Jack Daniel's recommended)
  • 4 tbsp butter (for the steak bites)
  • 2 garlic cloves (crushed)
  • 2 tsp fresh thyme (chopped)
  • 1 tbsp honey
  • chili flakes (to taste)
  • 1.7 lb potatoes (peeled and chopped)
  • 6 tbsp butter (melted, for the mash)
  • 0.5 cup warm milk
  • 1 bunch broccolini
  • olive oil (for cooking broccolini)

Steps

    Boil the peeled and chopped potatoes in salted water until tender.

    Drain the potatoes and mash them thoroughly.

  3. 3

    Stir in 6 tbsp of melted butter and 1/2 cup of warm milk until the mash is smooth. Season with salt and black pepper to taste.

    Pat the ribeye steak bites dry with paper towels and season them with salt and freshly cracked black pepper.

    Sear the steak bites in a pan with butter over high heat for about 2 minutes per side until well-browned. Remove the steak from the pan and set aside.

    Reduce the heat to medium. Add the remaining butter, crushed garlic, chopped thyme, and chili flakes to the pan. Cook for 30 seconds until fragrant.

    Carefully add the bourbon and honey to the pan. Use a spoon to scrape up any browned bits (fond) from the bottom of the pan.

    Simmer the sauce until it reduces and becomes glossy.

    Return the steak bites to the pan and toss them in the bourbon butter sauce until evenly coated.

    Cook the broccolini by sautéing, boiling, or roasting with olive oil and salt until tender.

    To plate, spoon a portion of mashed potatoes onto the plate, top with steak bites, and drizzle with the remaining sauce. Serve the broccolini on the side and garnish with extra thyme or flaky salt.

Notes

Be very careful when adding bourbon to a hot pan as it can flare up. You can use Jack Daniel's or any preferred bourbon.
