Ingredients
- 1.5 kg chicken wings (cleaned, halved at the joint, and with small superficial cuts)
- 2 tbsp yogurt (heaping tablespoons)
- 0.5 cup milk (based on half a Turkish tea cup (approx. 50-60ml))
- 2 garlic (crushed cloves)
- 4.5 tbsp olive oil (or vegetable oil; 4-5 tablespoons)
- 1 tbsp tomato paste
- 1 tsp sweet paprika
- 1 tsp chili flakes (optional if you like it spicy)
- 1 tsp dried thyme
- 1.5 tsp salt
- 0.5 tsp black pepper
- 1 tsp honey (heaping teaspoon)
- 1 tsp mustard (heaping teaspoon; can be substituted with 1 tablespoon of lemon juice)
Steps
- 1
Clean the chicken wings and cut them in half at the joint.
- 2
Make small cuts or incisions in the skin of the wings so the marinade penetrates better.
- 3
In a large bowl, mix all the sauce ingredients: yogurt, milk, crushed garlic, oil, tomato paste, paprika, chili flakes, thyme, salt, pepper, honey, and mustard (or lemon juice).
- 4
Add the wings to the bowl and mix well with the sauce until they are completely coated.
- 5
Let the chicken marinate in the refrigerator for at least 1-2 hours. The longer it rests in the sauce, the better the flavor will be.
- 6
Preheat the oven to 230°C (450°F) using the conventional setting (top and bottom heat, no fan).
- 7
Place the wings on a baking sheet and bake for 40-45 minutes until golden brown and crispy.
Notes
For optimal results, ensure the oven is well preheated. If you prefer a tangier touch, use lemon juice instead of mustard.
