Ingredients
- 400 g Marinated garlic shrimp, tails removed (Use prepared garlic-marinated shrimp without tails.)
- 1 tbsp Olive oil
- 1 Small onion (Finely chopped.)
- 2 Garlic cloves (Finely chopped.)
- 1 tbsp Tomato paste
- 400 ml Tomato Frito (Spanish-style seasoned tomato sauce.)
- 100 ml Light cooking cream (10% fat.)
- 100 g Feta cheese (Crumbled.)
- 1 tsp Smoked paprika
- 1 tsp Dried oregano
- 0.5 tsp Chili flakes (Optional, but recommended.)
- Salt (A pinch, or to taste.)
- Freshly ground black pepper (To taste.)
- 1 tbsp Dried chives (For garnish; fresh herbs and optional sprouts may also be used.)
- Water (A splash, only if the sauce is too thick.)
Steps
- 1
Heat the olive oil in a large, wide pan over medium-high heat. Add the marinated garlic shrimp and cook briefly until they are fully cooked and pink. Transfer the shrimp to a plate and set aside.
- 2
Reduce the heat to medium. Add the chopped onion and garlic to the same pan, using the flavored oil and pan juices, and sauté until softened and translucent.
- 3
Add the tomato paste and cook for 1 minute, stirring constantly so it darkens slightly without burning.
- 4
Add the Tomato Frito, oregano, smoked paprika, and optional chili flakes. Stir until combined. If the sauce is too thick, add a splash of water; it should be creamy but pourable.
- 5
Bring the sauce to a gentle simmer, then cook uncovered over low to medium-low heat for 10 minutes, stirring occasionally, until slightly thickened and fragrant.
- 6
Pour in the light cooking cream and stir thoroughly until the sauce is smooth and evenly combined. Warm gently without allowing it to boil vigorously.
- 7
Add the crumbled feta and fold it gently into the sauce. Do not let all of the feta dissolve; some pieces should remain for texture.
- 8
Return the cooked garlic shrimp and any accumulated juices to the pan. Stir gently until the shrimp are coated and heated through.
- 9
Taste the sauce and season with salt and freshly ground black pepper as needed.
- 10
Garnish with the dried chives and, if desired, fresh herbs or sprouts. Serve immediately with fresh bread for dipping.
