Ingredients

  • 8 oz imitation crab (finely chopped)
  • 8 oz cream cheese (softened to room temperature)
  • 2 green onions (finely sliced)
  • 1 clove garlic (minced)
  • 0.5 tsp Worcestershire sauce
  • 0.5 tsp soy sauce
  • 0.5 tsp sugar
  • 24 wonton wrappers
  • vegetable oil (for deep frying)
  • water (for sealing wrappers)

Steps

  1. 1

In a medium mixing bowl, combine the softened cream cheese, finely chopped imitation crab, sliced green onions, minced garlic, Worcestershire sauce, soy sauce, and sugar.

  2. 2

Mix the filling thoroughly until all ingredients are evenly distributed and the mixture is creamy.

  3. 3

Lay out a few wonton wrappers on a clean work surface. Keep the remaining wrappers covered with a damp paper towel to prevent them from drying out.

  4. 4

Place about 1 teaspoon of the crab mixture into the center of each wonton wrapper. Do not overfill, or they may burst during frying.

  5. 5

Dip your finger in water and moisten the edges of the wonton wrapper.

  6. 6

Bring the opposite corners of the wrapper together to the center and pinch them tightly to seal. Repeat with the other two corners to create a star-shaped pouch, ensuring there are no air bubbles inside.

  7. 7

Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

  8. 8

Carefully drop 4-6 wontons into the hot oil at a time. Do not overcrowd the pot.

  9. 9

Fry the wontons for 2-3 minutes, turning occasionally, until they are golden brown and crispy on all sides.

  10. 10

Use a slotted spoon to remove the wontons from the oil and drain them on a wire rack or paper towels.

  11. 11

Allow the crab rangoon to cool for a few minutes before serving, as the filling will be very hot. Serve with sweet and sour sauce if desired.

Notes

The author specifically notes that imitation crab provides a better texture and flavor for this recipe than inexpensive canned crab meat. Ensure the cream cheese is fully softened to avoid lumps in the filling.
