Ingredients

  • 4 sheets ready rolled puff pastry (thawed but cold)
  • 1 tbsp milk (20.60g)
  • 1 egg (for egg wash)
  • 500 g veal mince (or beef mince)
  • 500 g sausage mince (can use thick beef sausages with skins removed)
  • 1 brown onion (small, finely chopped)
  • 1 red onion (small, finely chopped)
  • 1 carrot (medium, coarsely grated and squeezed of excess moisture)
  • 3 cloves garlic (crushed)
  • 0.25 cup fresh flat-leaf parsley (finely chopped (62.50 ml))
  • 1.5 tbsp tomato sauce (31.20g)
  • 60 ml worcestershire sauce (1/4 cup)
  • salt and pepper (to taste)

Steps

    Preheat oven to 220C/200C fan-forced.

    Line 2 large baking trays with baking paper.

    Thaw puff pastry sheets, ensuring they remain cold to the touch.

    Meanwhile, combine 1 tablespoon of milk and 1 egg in a small jug. Whisk well to create an egg wash.

    In a large bowl, combine the veal mince, sausage mince, finely chopped brown onion, finely chopped red onion, grated carrot, crushed garlic, chopped parsley, tomato sauce, and Worcestershire sauce.

    Season the meat mixture with salt and pepper. Mix thoroughly and divide the mixture into 8 equal portions.

    Lay a sheet of pastry on a flat surface and cut the sheet in half horizontally.

    Spoon 1/8 of the mince mixture down along the long side of one pastry half, shaping the mince into a long sausage shape.

    Brush the opposite long edge of the pastry with a little of the egg mixture.

    Roll up the pastry to enclose the filling, finishing with the seam side down.

    Brush the top of the log with the egg mixture. Cut the log into 6 short pieces.

    Place the pieces, seam side down, on the prepared baking tray about 2cm apart.

    Repeat the process with the remaining mince mixture, pastry sheets, and egg wash.

    Bake for 25-30 minutes or until the pastry is golden brown and the meat is cooked through.

Notes

To avoid soggy pastry, squeeze out any excess moisture from the grated carrot before adding it to the meat. For a professional look, sprinkle the tops with sesame seeds before baking. You can freeze unbaked sausage rolls for up to one month by placing them between sheets of baking paper in an airtight container. If sausage mince is unavailable, you can use thick beef sausages and remove the skins.
