High Protein Ground Beef Mongolian Noodles

Ingredients
- 8 oz Linguine noodles (boiled until al dente)
- 1.5 lb Ground beef (93% lean)
- Salt (to taste)
- Black pepper (to taste)
- 6 Garlic (minced)
- 4 tsp Ginger (grated)
- 4 Green onions (sliced)
- 3 tbsp Brown sugar
- 0.5 cup Beef broth (low-sodium)
- 3 tbsp Hoisin sauce
- 0.5 cup Soy sauce (low-sodium)
- 1 tbsp Cornstarch (mixed with 1/4 cup water for slurry)
- 0.25 cup Water (for cornstarch slurry)
- 0.25 tsp Red pepper flakes (optional)
- Avocado oil spray (for cooking)

Bring a large pot of salted water to a boil. Add the 8 oz of linguine noodles and cook until al dente according to package directions. Drain and set aside.

Heat a large pan over high heat and coat with avocado oil spray.

Add the 1.5 lb of lean ground beef to the pan. Press it down firmly into the pan to maximize surface contact. Season with salt and pepper to taste.

Let the beef sear undisturbed for a few minutes until a beautiful golden brown crust develops, then flip and break it apart.

Add the 6 cloves of minced garlic and 4 tsp of grated ginger to the pan. Cook for a few more minutes until fragrant.

Stir in 3 tbsp of brown sugar, 3 tbsp of hoisin sauce, 1/2 cup of low-sodium soy sauce, 1/2 cup of low-sodium beef broth, and optionally 1/4 tsp of red pepper flakes.

Allow the sauce to simmer and cook for a few more minutes to meld the flavors.

In a small bowl, whisk together 1 tbsp of cornstarch and 1/4 cup of water to create a slurry. Pour the slurry into the pan and stir until the sauce thickens.

Add the cooked linguine noodles to the pan and toss everything together until the noodles are thoroughly coated in the sauce.

Serve the noodles in bowls and garnish with the 4 sliced green onions.
