Ingredients
- 200 g Feta cheese (one block, crumbled)
- 3 tbsp Olive oil (divided (for marinade and skillet))
- 1 tbsp Honey (for the marinade)
- 0.5 tsp Chili flakes (or to taste)
- 1 tsp Dried oregano
- 250 g Cherry tomatoes (about 1.5 cups)
- 2 Garlic (cloves, minced)
- 400 g Butter beans (one can, drained and rinsed)
- 0.5 Lemon (for juice)
- Fresh herbs (such as parsley or basil, for garnish)
Steps
- 1
Crumble a block of feta cheese into a small bowl.
- 2
Toss the crumbled feta with olive oil, honey, chili flakes, and dried oregano. Set aside to marinate while you prepare the rest of the dish.
- 3
In a skillet over medium heat, add olive oil and sizzle the cherry tomatoes until they begin to soften and blister.
- 4
Add minced garlic and additional dried herbs to the skillet with the tomatoes, sautéing until fragrant.
- 5
Add the drained and rinsed butter beans to the skillet. Stir and cook until the beans are warmed through.
- 6
Top the bean mixture with the honey-marinated feta.
- 7
Optional: Place the skillet under a broiler for 2-3 minutes until the feta is slightly softened and golden.
- 8
Finish the dish with a squeeze of fresh lemon juice and a sprinkle of fresh herbs before serving.
Notes
The broiling step is optional but recommended for a deeper flavor and softer feta texture. You can use any white beans if butter beans are unavailable, though butter beans provide the creamiest texture.
