- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp poultry seasoning
- 2 tsp fresh cracked pepper (Plus more to taste.)
- 1 tsp salt (Plus more to taste.)
- 14 oz extra-firm tofu (14 oz each; pressed and torn into 1½-inch pieces.)
- 2 tbsp cornstarch
- 1 tbsp neutral oil (Such as vegetable or avocado oil.)
- 3 tbsp vegan butter
- 1 large yellow onion (Diced.)
- 1 red bell pepper (Diced.)
- 1 yellow bell pepper (Diced.)
- 4 celery stalks (Diced.)
- 6 cloves fresh garlic (Minced.)
- 3 tbsp all-purpose flour
- 4 cups vegetable broth
- cooked rice (For serving; amount not specified.)
- fresh chives (Minced, for garnish; optional. Amount not specified.)
- fresh parsley (Minced, for garnish; optional. Amount not specified.)
- Louisiana hot sauce (For serving; optional. Amount not specified.)
Steps
- 1
Combine the smoked paprika, garlic powder, onion powder, poultry seasoning, fresh cracked pepper, and salt in a bowl. Mix well and set the seasoning blend aside.
- 2
Place the pressed, torn tofu in a large bowl. Sprinkle it with the cornstarch and 2 tablespoons of the reserved seasoning blend, then toss until every piece is thoroughly coated.
- 3
Heat the neutral oil in a large sauté pan over medium-high heat. When hot, add the tofu and cook, stirring occasionally, for 15–20 minutes, until browned on all sides and crisp around the edges.
- 4
Remove the crisp tofu from the pan and set it aside.
- 5
Add the vegan butter to the same pan over medium-high heat. Once melted, add the diced onion, red and yellow bell peppers, and celery. Cook, stirring often, for 3–5 minutes, until slightly tender.
- 6
Reduce the heat to medium. Add the minced garlic, flour, and remaining reserved seasoning blend. Cook, stirring often, for 1–2 minutes.
- 7
Pour in the vegetable broth while stirring well to break up any clumps. Bring the mixture to a simmer.
- 8
Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for 15–20 minutes, until the gravy has thickened slightly.
- 9
Return the tofu to the pan and toss gently to coat it in the gravy. Taste and adjust the seasonings if needed.
- 10
Serve over cooked white rice. Garnish with minced chives and parsley, and serve Louisiana hot sauce on the side if desired.
Notes
The recipe page also advises pressing the tofu between clean kitchen towels or paper towels with a heavy plate on top for at least 15 minutes to remove excess water and help the coating crisp. The amount of rice and optional garnish and hot sauce is not specified.
