Ingredients

  • 800 g Chicken (with skin) (e.g., drumsticks or thighs)
  • 100 g Gochujang paste (Korean chili paste)
  • 1 tbsp Sesame oil (for the marinade)
  • 3 tbsp Dark soy sauce
  • 1 tsp Ginger powder
  • 35 g Liquid honey (for the marinade)
  • 3 Garlic (cloves, finely grated)
  • 10 g Rice vinegar or white wine vinegar (for the marinade)
  • 1 Cucumber (washed)
  • 2 tsp Light soy sauce (for the cucumbers)
  • 1 tsp Rice vinegar or white wine vinegar (for the cucumbers)
  • 10 g Liquid honey (for the cucumbers)
  • 0.5 tsp Chili flakes
  • 0.5 tsp Garlic powder
  • 200 g White cabbage (finely sliced)
  • 0.25 tsp Salt
  • 2 tbsp Mayonnaise
  • 1 tbsp Yogurt
  • 1 tbsp Sesame oil (for the salad)
  • 2 tsp Toasted sesame seeds

Steps

    Place all ingredients for the chicken marinade (Gochujang, sesame oil, dark soy sauce, ginger powder, honey, grated garlic, and vinegar) in a bowl and whisk well.

    Add the chicken to the marinade and massage it thoroughly into the meat.

    Let the chicken marinate for as long as possible. Overnight is ideal, but 30 minutes is sufficient if you are in a hurry.

    Preheat the oven to 180°C. Place the chicken on a baking sheet lined with parchment paper and bake until cooked through.

    At the end of the cooking time, turn on the oven's grill (broiler) function for about 5 minutes to crisp up the skin. Watch closely to ensure nothing burns.

    For the cucumbers, wash and cut them into bite-sized pieces.

    Mix all ingredients for the cucumber marinade (light soy sauce, vinegar, honey, chili flakes, garlic powder) in a bowl and add the cucumber pieces.

    Toss everything together and place in the refrigerator while the chicken cooks to allow the flavors to meld.

    For the coleslaw, place the sliced white cabbage in a bowl and sprinkle with salt.

    Massage the salt into the cabbage and let it sit for 5 minutes to soften the cabbage.

    Add the remaining ingredients (mayo, yogurt, sesame oil, sesame seeds) and mix everything well.

Notes
