Ingredients

  • 0.25 cup butter (melted)
  • 3 tbsp cocoa powder (unsweetened; Guittard brand recommended)
  • 3 tbsp Swerve Confectioners (or other keto-friendly sweetener options)
  • salt (pinch)
  • 1 egg (large, room temperature)
  • 1 egg yolk (large, room temperature)
  • 0.25 tsp vanilla extract
  • 1 tbsp warm water (or coffee)

Steps

    Preheat the air fryer to 350ºF (175ºC).

    Lightly grease two jumbo-sized silicone muffin cups with butter. You can also use 4-ounce ramekins, but the cakes may not release as easily.

    In a medium microwave-safe bowl, melt the butter.

    Stir in the cocoa powder, sweetener, and salt until the mixture is smooth.

    Add the whole egg and the extra egg yolk and whisk until well combined. Don't worry if the mixture becomes a little gloppy initially.

    Whisk in the vanilla extract and the warm liquid (water or coffee) until you have a smooth batter.

    Divide the batter evenly between the two prepared muffin cups.

    Place the cups on the lowest rack of the air fryer.

    Cook for 6 to 7 minutes, until the tops are set but the center still feels a little soft to the touch.

    Flip the cakes out onto a plate. If you used silicone muffin cups, they should come out easily; if you used ramekins, run a knife around the outer edge to loosen before flipping.

Notes

Using room temperature eggs helps prevent the melted butter from seizing. For the best flavor, use a high-quality cocoa powder like Guittard. If using ramekins, ensure they are very well greased with butter to prevent sticking.
