Ingredients

  • 1 lb Italian Sausage
  • 1 lb Ground Beef
  • 0.5 Yellow Onion (diced)
  • 1 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Black Pepper (to taste)
  • 24 oz Pasta Sauce
  • 5 cup Chicken Broth (can substitute beef broth for richer flavor)
  • 0.5 cup Ricotta Cheese (can substitute with cottage cheese or heavy cream)
  • 10 Lasagna Sheets (broken into bite-sized pieces)
  • 1 cup Mozzarella Cheese (freshly shredded)

Steps

  1. 1

In a large pot over medium high heat, add the Italian sausage, ground beef, and diced onion.

  2. 2

Cook until the meat is browned and no pink remains, breaking it up as it cooks with a wooden spoon or spatula.

  3. 3

Drain any excess grease from the pot.

  4. 4

Stir in the Italian seasoning, onion powder, garlic powder, and black pepper to season the meat.

  5. 5

Pour in the pasta sauce and chicken broth, stirring to combine.

  6. 6

Bring the soup to a gentle boil.

  7. 7

Break the lasagna sheets into bite-sized pieces and add them to the boiling soup.

  8. 8

Cook until the noodles are tender, stirring occasionally to prevent sticking.

  9. 9

Stir in the ricotta cheese and let the soup simmer for a few minutes, stirring occasionally, until the cheese is fully incorporated and the soup is creamy.

  10. 10

Ladle the soup into bowls and top with freshly shredded mozzarella cheese. Serve hot.

Notes

Meal Prep Tip: If making ahead, store the soup and noodles separately to prevent the noodles from soaking up all the broth. Substitutions: You can use beef broth for a richer flavor. If you don't like ricotta, cottage cheese or a splash of heavy cream works well. Any pasta shape can be used if lasagna sheets are unavailable.
