Weights are estimates. Together, the ingredients weigh about 1.66 kg before cooking, which is about 415 g per serving.
Steps
In a large serving bowl, whisk the cashew or peanut butter with 3 tablespoons water until smooth.
Gradually stream in the lemon juice, olive oil and soy sauce while whisking constantly.
Stir in the honey, grated green chile and grated garlic. If the mixture looks grainy, add another splash of water until the dressing loosens and becomes smooth.
Season the dressing with salt and freshly ground black pepper.
Add the cabbage and toss well. Use your hands to massage the cabbage briefly so it softens slightly.
Add the shredded chicken and toss again until it is coated in the dressing.
Let the cabbage and chicken sit in the dressing for about 5 minutes so they can absorb the sauce.
Add the sliced cucumbers and chopped herbs, then toss again.
Taste and adjust the seasoning with more salt and pepper. Top with the chopped roasted cashews and serve.
Notes
The structured recipe does not specify a cooking method for the chicken; use shredded cooked chicken. The salad may be refrigerated for a few days, according to the recipe description, though cucumbers, herbs and cashews are best added just before serving for maximum freshness and crunch.
