Ingredients

  • 6 Flour tortillas (medium size, cut into halves)
  • 2 cup Cooked chicken breast (shredded or diced)
  • 4 oz Cream cheese (softened)
  • 0.5 cup Sour cream
  • 1 cup Salsa verde
  • 1.5 cup Shredded Monterey Jack cheese (divided)
  • 4 oz Diced green chiles (canned)
  • 1 tsp Cumin
  • 0.5 tsp Garlic powder
  • Salt and black pepper (to taste)
  • Fresh cilantro (chopped, for garnish)

Steps

    Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or similar sized baking dish.

    In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, salsa verde, diced green chiles, cumin, and garlic powder. Mix until well combined and creamy.

    Stir in 1/2 cup of the shredded Monterey Jack cheese into the chicken mixture. Season with salt and black pepper to taste.

    Cut the flour tortillas in half. Take one half-circle and fold it back and forth like an accordion or fan to create a zigzag shape.

    Place the folded tortilla piece into the prepared baking dish, standing it up so the folds face upward. Repeat with the remaining tortilla halves until the dish is filled with rows of zigzag tortillas.

    Spoon the creamy chicken mixture evenly over and into the folds of the tortillas, ensuring some of the mixture gets down between the layers.

    Sprinkle the remaining 1 cup of Monterey Jack cheese over the top of the dish.

    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are golden brown and slightly crispy.

    Remove from the oven and let rest for 5 minutes. Garnish with fresh chopped cilantro before serving.

Notes

For a spicier kick, use a hot salsa verde or add a pinch of cayenne pepper to the chicken mixture. You can also substitute corn tortillas, though they may need to be warmed slightly first to prevent cracking during the zigzag folding process.
