Queso Fundido with Chorizo and Mushrooms

Ingredients
- 200 g Chorizo (fresh, casing removed)
- 250 g Baby portobello mushrooms (cleaned with a paper towel and cut into pieces)
- 1 Jalapeño pepper (chopped)
- 0.25 White onion (coarsely chopped)
- 300 g Mozzarella cheese (shredded (Chihuahua or Asadero cheese can be used))
- Corn tortillas or tortilla chips (for serving)

Heat a skillet over medium heat. Add the crumbled chorizo without needing additional oil, as the chorizo will release its own fat.

While the chorizo cooks, clean the baby portobello mushrooms with a dry paper towel to remove dirt. Avoid washing them with water so they don't absorb moisture.

Chop the jalapeño pepper and add it to the skillet with the chorizo, which has been cooking for approximately 5 minutes.

Coarsely chop the onion and add it to the chorizo and jalapeño mixture.

Cut the mushrooms into medium-sized pieces and add them to the skillet. Cook everything together for a few minutes until the mushrooms soften slightly and the flavors meld. It is not necessary to add salt due to the salt content in the chorizo and cheese.

For assembly, take a clay dish or a heat-safe container. Place a layer of the chorizo and mushroom mixture at the bottom.

Cover with a generous layer of shredded mozzarella cheese.

Repeat the process by adding another layer of the chorizo mixture and finish with a final layer of cheese on top.

Place the clay dish on the grill or over low heat and cover with a lid.

Allow to cook covered for approximately 5 to 8 minutes, or until the cheese is completely melted and bubbly.

Serve immediately accompanied by warm tortillas or tortilla chips.
Notes
It is not recommended to wash the mushrooms as they absorb a lot of water; cleaning them with a dry cloth is sufficient. The author suggests not adding extra salt because the chorizo and cheese already provide enough seasoning.
