  • 8 large eggs
  • 250 g Mexican chorizo (Removed from the casing; may be substituted with bacon or sausage.)
  • 500 g potatoes (Peeled and cut into small cubes.)
  • 1 white onion (Chopped.)
  • 3 tomatoes (Chopped.)
  • 1 jalapeño chile (Seeded and chopped; optional if you prefer less heat.)
  • 2 dientes garlic (Finely chopped.)
  • 1 tbsp vegetable oil (For cooking.)
  • 150 g Chihuahua or Manchego cheese (Grated.)
  • salt (To taste.)
  • black pepper (To taste.)
  • 2 tbsp fresh cilantro (Chopped, for finishing.)

    Preheat the oven to 190 °C. Have a casserole dish or cast-iron skillet ready that can be transferred from the stovetop to the oven.

    Heat the oil in the casserole dish over medium heat. Add the potatoes, season with salt and pepper, and cook for 8 to 10 minutes, stirring frequently, until they begin to brown and are almost tender.

    Add the crumbled chorizo. Cook for 5 to 7 minutes, breaking it up with a spoon, until fully cooked and its fat has rendered.

    Add the onion, tomatoes, jalapeño, and garlic. Cook for 4 to 5 minutes, until the onion is translucent, the tomatoes have softened, and the mixture is fragrant.

    Taste the mixture and adjust the salt and pepper. Spread it into a relatively even layer in the casserole dish.

    Make eight wells in the mixture and crack an egg into each one. Avoid breaking the yolks if you want them to remain visible when serving.
