Steps
Slice the onion into thick rings. Select the largest outer rings to use as the molds for the egg patties.
In a medium mixing bowl, combine the eggs, finely diced vegetables, diced ham, and flour. Season with salt and pepper to taste.
Whisk or stir the mixture thoroughly until the flour is incorporated and the ingredients are evenly distributed.
Lightly coat a non-stick frying pan with cooking spray or oil and heat over medium heat.
Place the large onion rings into the heated pan.
Carefully pour the egg and vegetable mixture into the center of each onion ring, filling them nearly to the top.
Fry until the egg is set and the bottom is golden brown.
Carefully flip each onion ring and continue to fry until the second side is golden and the egg is cooked through.
Remove from the pan and serve your delicious egg patties warm.
Notes
You can customize the diced veggies based on what you have in the fridge—bell peppers, spinach, or mushrooms work well. Ensure the onion rings are sliced evenly so the egg mixture doesn't leak out from underneath.
