Ingredients
- 1 cup butter (softened)
- 2.5 cup powdered sugar
- 1 tsp vanilla
- salt (1 pinch)
- 3 eggs
- 3.75 cup flour (Use 3½–4 cups, adding gradually until dough is moist, holds together, and does not stick to hands.)
- food coloring (Red, orange, yellow, green, blue, and purple; use ¼ teaspoon of dye per dough ball. Gloves optional but suggested.)
Steps
- 1
Preheat the oven to 350°F (180°C).
- 2
Using a hand mixer or stand mixer, beat the softened butter until creamy.
- 3
Add the powdered sugar and beat until combined.
- 4
Add the vanilla, salt, and eggs. Beat until well combined.
- 5
Gradually add the flour until the dough is moist and holds together without sticking to your hands.
- 6
Turn the dough onto a cutting board and form it into a ball. Cut the ball in half. Cover one half with plastic wrap and set it aside for the outer dough.
- 7
Divide the other half into six pieces. Make two pieces slightly larger than the others for the outer rainbow layers.
- 8
Color each piece by placing ¼ teaspoon of its corresponding food coloring on the dough and kneading until the color is uniform. Gloves are optional but suggested.
- 9
Starting with the purple dough, roll it into a log about 6–8 inches long to form the center of the rainbow.
- 10
Roll the blue dough with a rolling pin to about ¼ inch thick. Make it slightly longer than the purple log and wide enough to wrap around it.
- 11
Wrap the blue dough around the purple log, pinching together any cracks and cutting away excess dough.
- 12
Repeat the rolling and wrapping with the green, yellow, orange, and red dough, making each successive layer wider so it fits around the previous color. The red layer should be the widest.
- 13
Wrap the rainbow log in plastic wrap and chill for 30 minutes.
- 14
Remove the plastic wrap, cut the chilled dough in half to make two rainbow shapes, and set them aside.
- 15
Cut the reserved plain dough in half. Roll each piece to ¼-inch thickness and make it slightly longer than a rainbow log.
- 16
Place a rainbow log in the center of a rolled plain-dough piece and wrap the plain dough around it. Pinch together cracks and smooth the surface. Repeat with the other pieces.
- 17
Wrap the two dough logs in plastic wrap and chill for another 30 minutes.
- 18
Slice the chilled dough into cookies about ½ inch thick and arrange them on a parchment-lined baking sheet.
- 19
Bake for 20 minutes, or until the bottoms have browned slightly.
- 20
Transfer the cookies to a cooling rack and let them cool. Enjoy.
Notes
The recipe specifies 3½–4 cups flour; the amount needed depends on the dough texture. Food-coloring quantity is given per dough ball, not as a total. The source does not specify the cooling duration.
