Ingredients

  • 0.75 cup Water (For brewing the rose chai)
  • 1 tsp Black tea leaves (Loose-leaf tea)
  • 0.5 cup Whole milk (For a creamy chai)
  • 1 tbsp Rose syrup (Adjust to taste; rose water may be substituted, but will be less sweet)
  • 1 tsp Sugar (Adjust to taste)
  • 1 tsp Green tea leaves (For the kahwa)
  • 1 cup Water (For brewing the kahwa)
  • 2 Green cardamom pods (Lightly crushed)
  • 1 Cinnamon stick (Small piece)
  • 0.125 tsp Saffron threads (A small pinch)
  • 1 tsp Honey (Add after brewing; adjust to taste)
  • 1 tbsp Almonds (Slivered, for garnish)
  • 0.5 cup Water (For brewing the chocolate chai)
  • 1 tsp Black tea leaves (Loose-leaf tea)
  • 0.75 cup Whole milk (For the creamy texture)
  • 1 tbsp Unsweetened cocoa powder (Sift if lumpy)
  • 2 tsp Sugar (Adjust to taste)
  • 1 Green cardamom pod (Lightly crushed)

Steps

  1. 1

For the Pink Rose Chai, bring the water to a gentle boil in a small saucepan. Add the black tea leaves and simmer for 2 minutes, until the water is deeply colored and fragrant.

  2. 2

Add the milk, rose syrup, and sugar to the saucepan. Stir and heat until steaming, but do not allow the milk to boil vigorously. Simmer for 2–3 minutes so the flavors combine.

  3. 3

Strain the Pink Rose Chai into a cup and serve hot.

  4. 4

For the Green Elaichi Kahwa, bring the water, crushed cardamom, cinnamon, and saffron to a simmer. Cover and infuse for 3–4 minutes, until aromatic.

  5. 5

Turn off the heat and add the green tea leaves. Steep for 2 minutes; avoid prolonged boiling or steeping, which can make green tea bitter.

  6. 6

Strain the kahwa into a cup. Stir in the honey only after straining, then garnish with slivered almonds and serve hot.

  7. 7

For the Creamy Chocolate Masala Chai, bring the water and crushed cardamom to a simmer in a small saucepan. Add the black tea leaves and simmer for 2 minutes.

  8. 8

Add the milk, cocoa powder, and sugar. Whisk continuously until the cocoa dissolves and the mixture is hot and lightly frothy, about 2–3 minutes. Do not scorch the milk.

  9. 9

Strain the chocolate chai into a cup and serve immediately.
