Ingredients

  • 1 small white onion (chopped)
  • 1 tsp fresh ginger-garlic paste
  • 3 tbsp neutral oil
  • salt (to taste; the salt level in the cooking water should be a little high)
  • 1 tsp ground cumin
  • 1 cinnamon stick
  • 1 black cardamom
  • 2 green cardamom
  • 5 whole black peppercorns (Use 5–8 peppercorns)
  • 2 cups white rice (washed and drained)
  • 0.75 cup peas (frozen or fresh)
  • 1 green chili
  • 2.5 cups water (The source specifies 1 1/4 cups water per cup of rice)
  • sugar (one small pinch, sprinkled over the rice immediately before covering)

Steps

  1. 1

Wash the rice and drain it thoroughly. Chop the onion and prepare the ginger-garlic paste, spices, peas, and green chili.

  2. 2

Set the Instant Pot to Sauté mode and allow it to heat. Add the neutral oil.

  3. 3

Add the chopped onion and fry for 2–3 minutes.

  4. 4

Add the ginger-garlic paste, cumin, cinnamon stick, black cardamom, green cardamom, black peppercorns, and green chili. Fry for 1 minute, until the spices are fragrant.

  5. 5

Add the peas and salt. Stir to combine, then turn Sauté mode off.

  6. 6

Add the washed and drained rice to the pot.

  7. 7

Pour in 2 1/2 cups of water. The source specifies 1 1/4 cups of water for each cup of rice.

  8. 8

Check the seasoning. The water should taste slightly saltier than you want the finished rice to taste.

  9. 9

Mix the rice, water, peas, and seasonings. Immediately before putting on the lid, sprinkle one small pinch of sugar over the rice.

  10. 10

Place and lock the Instant Pot lid. If required by your model, manually move the pressure valve to Sealing.

  11. 11

Set the Instant Pot to High Pressure for 5 minutes and start cooking.

  12. 12

When the 5-minute cooking time is complete, wait 5 minutes before releasing the pressure. The source refers to waiting until the display reaches L05.

  13. 13

Release the remaining pressure after the 5-minute wait, then open the pot and serve the rice.

Notes

The recipe can be doubled. The source does not specify a final resting time beyond the 5-minute pressure-release wait, nor does it specify the pressure-release method in detail.
