Creamy Lasagna Soup

- 1 tbsp Olive oil (for sautéing)
- 1 lb Italian sausage (bulk or casings removed)
- 1 Yellow onion (large, finely diced)
- 4 clove Garlic (roughly chopped)
- 2 tbsp Tomato paste
- 1 tsp Garlic powder
- 0.5 tsp Dried thyme
- 1 tsp Dried oregano
- 1 tsp Dried parsley
- 1 tsp Dried basil
- 0.5 tsp Crushed red pepper flakes
- Salt (to taste)
- Black pepper (to taste)
- 4 cup Beef bone broth
- 15 oz Tomato puree
- 1 cup Heavy cream
- 1 cup Ricotta cheese (for the cheese topping)
- 1.5 cup Mozzarella cheese (shredded, divided)
- 0.5 cup Parmigiano-Reggiano (grated, divided)
- 2 tbsp Fresh parsley (chopped)
- 8 oz Lasagna noodles (broken into pieces)

Finely dice one large yellow onion and roughly chop the garlic cloves.

Add a little olive oil to a Dutch oven over medium-high heat.

Add the Italian sausage to the Dutch oven and cook until it starts to develop a good brown color.

Add the diced onions and chopped garlic to the pot with the sausage.

Reduce the heat to medium and let the onions cook down until they are soft and translucent.

Add the tomato paste, garlic powder, dried thyme, dried oregano, dried parsley, dried basil, crushed red pepper flakes, salt, and pepper. Stir and cook for about 3 to 4 minutes to toast the spices and paste.

Pour in the beef bone broth, tomato puree, and heavy cream.

Scrape the browned bits (fond) off the bottom of the pot with a spoon to incorporate them into the liquid.

Bring the soup up to a simmer and let it cook for about 20 minutes.

While the soup simmers, prepare the cheese topping by mixing ricotta, a portion of the mozzarella, a portion of the Parmigiano-Reggiano, fresh parsley, salt, and pepper in a small bowl.

After the 20-minute simmer, add the remaining Parmigiano-Reggiano, the remaining mozzarella, and the broken lasagna noodles directly into the pot.

Carefully stir everything together and continue cooking until the lasagna noodles are tender.

Serve the soup in bowls topped with a dollop of the ricotta cheese mixture.
Notes
