Weights are estimates. Together, the ingredients weigh about 465 g before cooking, which is about 235 g per serving.

Steps

  1. Heat the olive oil in a cast-iron or nonstick pan over medium heat.

  2. Add the block of tofu to the pan. Mash it directly in the pan with a potato masher or fork, or crumble it in with your hands.

  3. Cook the mashed tofu, stirring frequently, for 3–4 minutes, until most of the water from the tofu has cooked away.

  4. Add the nutritional yeast, kala namak, turmeric, and garlic powder to the pan.

  5. Cook and stir constantly for about 5 minutes. For more browned flavor, continue cooking longer, leaving the tofu undisturbed for a few minutes at a time, until golden spots form on some of the tofu.

  6. Pour the non-dairy milk into the pan and stir until it is evenly mixed into the tofu scramble.

  7. Serve immediately with sliced avocado, hot sauce, parsley, steamed kale, toast, or another preferred breakfast accompaniment.

Notes

Kala namak provides the characteristic sulfur-like, eggy flavor; regular table salt or sea salt may be used instead. Firm tofu is preferred, but extra-firm tofu also works. Optional additions include sautéing 1/4 cup diced onion, minced garlic, or diced bell pepper in the oil for 2–3 minutes before adding the tofu; add spinach, kale, sliced peppers, broccoli, or tomatoes after adding the milk and cook for a few minutes. The scramble can be refrigerated for up to 3 days and reheated. Nutritional values are estimated per listed ingredient and may vary by brand.
