  • 250 g Beef (sliced thinly against the grain)
  • 1 tbsp Soy sauce (for marinade)
  • 1 tsp Shaoxing wine (Chinese cooking wine)
  • 0.25 tsp Baking soda (to tenderize the beef)
  • Salt (to taste)
  • 1 tsp Cornstarch (for marinade)
  • 2 tbsp Vegetable oil (divided for frying)
  • 3 clove Garlic (minced)
  • 0.5 cup Mushrooms (sliced)
  • 1 cup Broccoli (cut into small florets)
  • 2 cup Day-old white rice (cold, leftover rice works best)
  • 1 tbsp Light soy sauce (for seasoning)
  • 1 tsp Dark soy sauce (for color)
  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • White pepper (a pinch)
  • 0.5 tsp Sugar
  • 1 tbsp Chili oil (Lao Gan Ma or similar)

Steps

    In a bowl, marinate the sliced beef with soy sauce, Shaoxing wine, baking soda, salt, cornstarch, and a drizzle of oil. Mix well and let it sit for a few minutes.

    Heat a wok or large skillet over high heat with oil. Add the marinated beef and stir-fry until it is about 80% cooked through. Remove the beef from the pan and set aside.

    In the same pan, add more oil if needed. Sauté the minced garlic and sliced mushrooms until they are fragrant and softened.

    Add the broccoli florets to the pan and stir-fry for a minute or two until they start to soften but remain vibrant green.

    Add the day-old white rice to the pan, breaking up any large clumps with your spatula.

    Season the rice with light soy sauce, dark soy sauce, oyster sauce, sesame oil, white pepper, sugar, and chili oil.

Notes

Using day-old rice is essential for fried rice as it is drier and won't become mushy. If you don't have Shaoxing wine, you can substitute with dry sherry or omit it.
