Carrot Cake Baked Oatmeal

- 2 cup rolled oats
- 1.5 cup milk (of choice)
- 2 eggs (can use flax eggs)
- 0.25 cup maple syrup (can use sugar-free)
- 1 cup carrot (grated)
- 1 tsp vanilla extract
- 1.5 tsp cinnamon
- 0.5 tsp nutmeg
- 1 tsp baking powder
- 0.25 tsp salt
- 0.5 cup walnuts (chopped)
- 0.25 cup raisins
- 4 oz light cream cheese (softened)
- 2 tbsp maple syrup (for frosting; can use sugar-free)
- 0.5 tsp vanilla extract (for frosting)

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt.

Add the wet ingredients to the bowl: milk, eggs, maple syrup, grated carrot, and vanilla extract. Stir until well combined.

Gently fold in the chopped walnuts and raisins.

Pour the mixture into a baking dish and bake for 25-30 minutes until set and golden.

While the oats bake, prepare the frosting by whisking together the softened light cream cheese, 2 tablespoons of maple syrup, and 1/2 teaspoon of vanilla extract until smooth.

Let the baked oatmeal cool slightly, then spread the cream cheese frosting over the top. Garnish with additional raisins and walnuts if desired.
Notes
Store in an airtight container in the refrigerator for up to 5 days. You can use flax eggs (2 tbsp ground flaxseed meal mixed with 6 tbsp water, let sit for 5 mins) to make this vegan-friendly if using plant-based milk and cream cheese.
