Ingredients

  • 500 g lamb mince (ground meat)
  • 400 g spaghetti (cooked al dente)
  • 1 onion (finely diced)
  • 1 carrot (finely diced)
  • 1 celery stalk (finely diced)
  • 1 tsp green masala
  • 1 tsp garlic (chopped)
  • 1 chilli (chopped, adjust to taste)
  • 1 bay leaf
  • thyme (a few sprigs)
  • 307.5 g diced tomatoes (3/4 of a 410g can; use whole can for extra sauciness)
  • 1 tsp turmeric
  • 1.5 tsp masala (adjust to taste)
  • 1 tsp garam masala
  • 1 tsp spice for mince (such as Robertsons)
  • 1 tsp pepper
  • salt (to taste, considering salt already in mince spice)
  • 1 tbsp Worcestershire sauce
  • cheese (for topping, choice of your own)

Steps

    Prepare the base aromatics by finely dicing the onion, carrot, and celery stalk.

    In a large pan over medium heat, sauté the diced onion, carrot, and celery until softened.

    Add the green masala, chopped garlic, chopped chilli, bay leaf, and thyme sprigs to the pan. Sauté for a minute until fragrant.

    Add the lamb mince to the pan. Brown the meat, breaking it up with a spoon as it cooks.

    Stir in the turmeric, masala, garam masala, spice for mince, pepper, and salt. Mix well to coat the meat in the spices.

    Pour in the diced tomatoes and Worcestershire sauce. Stir to combine.

    Simmer the mixture over low-medium heat until the sauce has thickened and the flavors have melded, about 10-15 minutes.

    While the mince is simmering, cook the spaghetti in a large pot of salted boiling water until al dente. Drain well.

    Combine the cooked spaghetti with the mince sauce, or serve the mince over the pasta.

Notes

The author suggests using a whole 410g can of tomatoes if you prefer a saucier dish. Be cautious with salt as the 'spice for mince' blend often contains salt already.
