Ingredients

  • 3 lb Lean Ground Beef (96/4) (1,360g)
  • 5 Russet Potatoes (medium, 220g each, diced)
  • 1 White Onion (sliced)
  • 1.5 cup Dill Pickle Chips (175g)
  • 2 cup Reduced Fat Cheddar Cheese (224g)
  • 2 tsp Garlic Powder (divided)
  • 2 tsp Salt (divided)
  • 2 tsp Pepper (divided)
  • 0.25 cup 0% Greek Yogurt (60g)
  • 0.25 cup Light Mayo (60g)
  • 3 tbsp Ketchup (51g)
  • 2 tbsp Sweet Pickle Relish (30g)
  • 1 tsp Honey (7g)
  • 1 tsp Yellow Mustard (5g)
  • 1.5 tsp Distilled White Vinegar (7g)

Steps

    Dice the 5 medium russet potatoes into small cubes. Place them in a bowl and spray with light olive oil spray.

    Season the potatoes with a portion of the salt, pepper, and garlic powder. Toss well to ensure even coating.

    Add the seasoned potatoes to the air fryer. Cook at 400°F (200°C) for 30 minutes or until they are crispy and golden brown.

    While the potatoes are cooking, place 3 lbs of lean ground beef in a large skillet or pan over medium-high heat.

    Season the beef with the remaining salt, pepper, and garlic powder. Break the meat up with a spatula as it browns.

    Add the sliced white onion to the pan with the beef. Sauté until the beef is fully cooked through and the onions are softened and slightly caramelized.

    Prepare the Animal Style Sauce by whisking together the 0% Greek yogurt, light mayo, ketchup, sweet pickle relish, honey, yellow mustard, and distilled white vinegar in a small bowl until smooth.

    To assemble for meal prep, evenly distribute the crispy potatoes among 6 containers.

    Top the potatoes with the ground beef and onion mixture, followed by the reduced fat cheddar cheese.

    Store the sauce and dill pickle chips separately to maintain freshness. When ready to eat, reheat the bowl, then top with the pickles and sauce.

Notes

For meal prep, keep the sauce and pickles in separate small containers so the potatoes stay crispy and the toppings stay cold until serving. Reheat the beef and potato base before adding the cold elements.
