Ingredients
- 125 g Butter
- 250 g Handkäse or Harzer cheese (Use one of the two varieties.)
- 150 g Cream
- 250 g Low-fat quark
- 0.5 TL Baking soda
- 0.5 TL Salt
- Caraway (To taste; optional.)
Steps
- 1
Melt the butter slowly in a saucepan over low heat.
- 2
Add the Handkäse or Harzer cheese to the melted butter and let it melt slowly as well. Stir repeatedly, making sure nothing sticks or burns on the bottom of the saucepan.
- 3
Add the cream and stir it in slowly until everything is well combined.
- 4
Stir in the low-fat quark until the mixture is evenly combined. Continue stirring regularly and do not let the saucepan get too hot.
- 5
Season with salt and baking soda, then mix thoroughly. According to the source, the baking soda provides a certain lightness.
- 6
Turn off the heat. The cooked cheese will initially be very runny; this is intentional, and it will firm up as it cools.
- 7
Transfer the cooked cheese to a bowl and let it cool at room temperature. Then place it in the refrigerator.
- 8
Remove it from the refrigerator 2–3 hours before serving. Add caraway to taste and serve; it goes well with sourdough bread, potatoes, schnitzel, or French fries.
