- 1 package puff pastry (such as Jus-Rol® (13.68 ounce))
- 2 cup rotisserie chicken (shredded, cooked)
- 0.33 cup pesto (or to taste)
- 1 cup Swiss cheese (shredded)
- 1 egg white (lightly beaten)
- 1 tsp poppy seeds

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out puff pastry sheet and cut into 4 to 6 squares (depending on size preference).

Adjust the square so it's a diamond shape, with the bottom point right in front of you.

Place an equal amount of shredded chicken, a spoonful of pesto, and a sprinkle of Swiss cheese down the center of each pastry diamond.

Fold the 2 opposite corners over filling so they meet in the middle, forming a neat football-shaped parcel, then press together to seal.

Brush the top of each parcel with egg white for shine, then sprinkle with poppy seeds.
