Ingredients

  • 1 tbsp olive oil (for browning chicken)
  • 1.5 lb chicken thighs (boneless, skinless, cut into bite-sized pieces)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 2 carrots (peeled and sliced into rounds)
  • 3 potatoes (large, peeled and chopped into chunks)
  • 0.25 cup all-purpose flour (to thicken the gravy)
  • 3 cup chicken stock (low sodium preferred)
  • 1 tsp dried thyme
  • salt and black pepper (to taste)
  • 0.5 cup frozen peas
  • fresh parsley (chopped, for garnish)

Steps

    Heat the olive oil in a large pot or Dutch oven over medium-high heat.

    Add the chicken pieces to the pot and cook until browned on all sides. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

    Add the sliced carrots and potato chunks to the pot. Stir to combine with the aromatics.

    Sprinkle the flour over the vegetables and stir well for 1-2 minutes to cook out the raw flour taste. This will create the base for the luscious gravy.

    Slowly pour in the chicken stock while stirring constantly to prevent lumps from forming.

    Add the browned chicken back into the pot along with the dried thyme, salt, and black pepper.

Notes

This stew freezes exceptionally well. Store leftovers in an airtight container in the freezer for up to 3 months. Reheat gently on the stove, adding a splash of water or stock if the gravy has thickened too much. Serving with crusty bread is highly recommended to soak up the gravy.
