Crab and Spinach Stuffed Salmon

Ingredients
- 1 slab salmon (large side of salmon)
- 10 oz lump crab meat (8-12 oz range provided)
- 8 oz cream cheese (softened)
- 2 cup frozen chopped spinach (thawed and squeezed dry)
- 1 lemon juice (from 1 medium lemon)
- 0.25 cup Worcestershire sauce
- 1.25 tbsp garlic paste (1 to 1.5 tbsp)
- 1.5 tsp sazon seasoning
- 1 tsp dried oregano
- 1 tsp red pepper flakes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt (optional)
- 1 stick butter (for garlic butter glaze)
- 1.5 tsp garlic powder (for garlic butter; 1-2 tsp)
- fresh parsley (to garnish)

Prepare the seasoning blend by mixing the sazon, dried oregano, red pepper flakes, garlic powder, onion powder, and salt (if using) in a small bowl. Set aside.

In a large mixing bowl, combine the softened cream cheese, thawed and drained spinach, lump crab meat, lemon juice, Worcestershire sauce, and garlic paste. Mix until well incorporated.

Prepare the salmon by laying the slab flat. Using a sharp knife, slowly slice open the salmon horizontally to create a pocket, being careful not to cut all the way through. Gently pull the flesh to open up space for the filling.

Season the inside and outside of the salmon with approximately 1/2 to 1 teaspoon of the prepared seasoning blend.

Stuff the cream cheese and crab mixture generously into the salmon pocket, spreading it evenly.

Preheat your oven to 375°F (190°C). Place the stuffed salmon on a lined baking sheet.

Bake the salmon for 20-25 minutes, or until the salmon is cooked through and the filling is hot and bubbly.

While the salmon bakes, prepare the garlic butter by melting one stick of butter and whisking in 1-2 teaspoons of garlic powder.

Remove the salmon from the oven and immediately brush the top with the garlic butter. Garnish with fresh chopped parsley before serving.
Notes
For extra flavor, you can add cooked shrimp into the spinach and crab filling. Ensure the frozen spinach is squeezed very dry to prevent the filling from becoming watery.
