Ingredients

  • 2 large chicken breasts (sliced into strips)
  • 4 chipotle peppers in adobo (3-4 peppers)
  • 4 garlic cloves
  • 1 small onion
  • 1 tbsp mayonnaise (for the marinade)
  • 2 tbsp Greek yogurt
  • 0.5 lime juice (juice of half a lime)
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • salt (to taste)
  • black pepper (to taste)
  • 2 tbsp additional mayonnaise (for the creamy sauce)
  • 1 red onion (sliced)
  • 1 medium cucumber (chopped)
  • 1 red bell pepper
  • 0.25 cup fresh parsley (chopped)
  • 1 tbsp honey
  • 0.5 lemon juice (juice of half a lemon)
  • 1 tbsp avocado oil (or olive oil)
  • 4 large lavash bread (3-4 pieces)
  • French fries (optional, for the filling)

Steps

  1. 1

To make the marinade, place the chipotle peppers, garlic, onion, mayonnaise, Greek yogurt, lime juice, paprika, chili powder, garlic powder, cumin, salt, and pepper in a blender or food processor.

  2. 2

Blend the ingredients until a smooth and homogeneous mixture is obtained.

  3. 3

Reserve half of the prepared marinade in a separate bowl before adding the chicken.

  4. 4

Coat the chicken strips with the remaining half of the marinade. For best flavor, refrigerate and let marinate for up to 2 hours.

  5. 5

Heat a pan with a splash of oil over medium-high heat.

  6. 6

Cook the chicken for 4 to 5 minutes per side until golden brown and fully cooked.

  7. 7

Prepare the sauce by mixing the reserved marinade with the 2 additional tablespoons of mayonnaise. Mix until creamy and adjust salt and lime to taste.

  8. 8

For the salad, combine the red onion, cucumber, red bell pepper, and parsley in a bowl.

  9. 9

Dress the vegetables with honey, lemon juice, oil, and salt; mix well to integrate the flavors.

  10. 10

To assemble, spread a portion of the sauce over the lavash bread.

  11. 11

Add the cooked chicken, fresh salad, and French fries if using.

  12. 12

Roll the wrap tightly and toast it in a pan for 2 to 3 minutes per side until golden brown and crispy.

Notes

You can refrigerate the chicken marinating for up to 2 hours to intensify the flavors. Lavash bread can be substituted with large flour tortillas if you can't find it.
