Crispy Beef Cones
Fun and crispy tortilla cones filled with a seasoned ground beef mixture and melted cheese, perfect as an appetizer or a quick dinner.

Ingredients
- 6 flour tortillas (25-30 cm, cut in half)
- 100 g mozzarella cheese (shredded for topping)
- 1 tsp chopped parsley (for garnish)
- 400 g ground beef
- 1 yellow onion (finely chopped)
- 4 garlic (cloves, minced)
- 1 red bell pepper (small, diced)
- 1 green bell pepper (small, diced)
- 1 tbsp tomato paste (large tablespoon)
- 100 ml soy milk
- 1 tbsp paprika
- 1 tsp chili powder
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp garam masala
- 0.5 tsp salt
- vegetable oil (a bit for sautéing)

Heat a bit of oil in a skillet over medium heat. Add the onion and sauté until softened.

Add the minced garlic and cook for 30 seconds until fragrant.

Add the ground beef and cook until browned, breaking it up as it cooks.

Stir in the tomato paste, soy milk, diced peppers, and all the seasonings (paprika, chili powder, turmeric, garlic powder, pepper, garam masala, and salt).

Cook until the mixture thickens slightly. Remove from heat and let cool slightly.

Cut the tortillas in half. Roll each half into a cone shape and secure the edge with a toothpick.

For the oven method: Preheat the oven to 190°C (375°F). Place the cones on a baking sheet lined with parchment paper and lightly spray with cooking oil spray.

Bake the empty cones for 10-12 minutes until crispy and golden brown.

Fill each cone with the beef mixture and top with mozzarella cheese.

Return to the oven for an additional 5 minutes until the cheese has melted.

Garnish with parsley and serve hot.
Notes
Can also be prepared in an air fryer: preheat to 180°C (356°F), cook the empty cones for 6-8 minutes, fill, and cook for another 3-4 minutes until the cheese is melted.
