Ingredients

  • 2 lb ground turkey
  • 2 portobello mushrooms (finely grated)
  • 16 oz Beecher’s Flagship cheese or sharp cheddar (freshly shredded)
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • black pepper (freshly ground, to taste)
  • 0.25 cup fresh parsley (minced)
  • 2 yellow onion (diced)
  • 2 tbsp olive oil (for onions)
  • 2 tbsp salted butter (for onions)
  • 1 cup mayonnaise
  • 1 lemon juice (juice of 1 lemon)
  • 7 garlic (finely minced)
  • 0.5 tsp kosher salt (for aioli; use up to 1 tsp)
  • 2 tbsp fresh chives (minced, plus more for garnish; use up to 3 tbsp)

Steps

    Melt 2 tablespoons of salted butter and 2 tablespoons of olive oil in a skillet over medium heat.

    Add the 2 diced yellow onions and a pinch of salt to the skillet. Sauté, stirring occasionally, until the onions are jammy and browned, about 20 minutes.

    In a small bowl, whisk together 1 cup mayonnaise, the juice of 1 lemon, 7 minced garlic cloves, 1/2 to 1 teaspoon kosher salt, and 2 to 3 tablespoons of minced chives to make the aioli. Set aside.

    Finely grate the 2 portobello mushrooms using a box grater.

    In a large bowl, gently combine the 2 lbs ground turkey, grated mushrooms, 16 oz shredded cheese, 1 teaspoon garlic powder, 1 teaspoon salt, freshly ground black pepper, and 1/4 cup minced parsley.

    Mix the ingredients just until combined, being careful not to overmix, which can make the burgers tough.

    Form the mixture into 6 large patties, pressing a slight indentation into the center of each with your thumb to prevent bulging during cooking.

    Heat a lightly oiled grill or skillet over medium-high heat.

    Cook the patties for about 5–6 minutes per side, or until the internal temperature reaches 165°F.

    Let the burgers rest for 3 minutes before serving to allow the juices to redistribute.

Notes

The indentation in the center of the patty helps it cook evenly without puffing up. Using freshly shredded cheese ensures it melts better than pre-shredded varieties.
