Dirty Cabbage
This dirty cabbage is savory and slightly spicy—Cajun seasoning and andouille sausage do the heavy lifting by adding lots of aroma and heat. “Zesty” is a pretty great word for this!

Ingredients
- 1 tbsp olive oil
- 1 lb lean ground sirloin beef
- 12 oz smoked andouille sausage (sliced into rounds)
- 3 scallions (thinly sliced, plus more for garnish)
- 1 medium red bell pepper (chopped)
- 1 medium green bell pepper (chopped)
- 1 celery rib (chopped)
- 3 garlic cloves (finely chopped)
- 2 tbsp tomato paste
- 2 tbsp Cajun seasoning (such as McCormick)
- 1 small green cabbage (sliced 1/4-in.-thick)
- 1 cup chicken broth
- 3 tbsp cider vinegar
- 0.75 tsp kosher salt

Heat olive oil in a large Dutch oven over medium-high heat.

Add ground beef; cook, stirring to crumble, until browned, about 7 minutes.

Use a slotted spoon to transfer the browned beef to a paper towel-lined plate.

Add the sliced andouille sausage to the Dutch oven; cook, stirring often, until browned, about 5 minutes.

Transfer the sausage to the plate with the beef.

Reduce the heat to medium; add the sliced scallions, chopped red pepper, chopped green pepper, and chopped celery.

Cook the vegetables, stirring often, until softened, about 5 minutes.

Add the finely chopped garlic, tomato paste, and Cajun seasoning.

Cook, stirring constantly, until fragrant, about 1 minute.

Stir in the sliced cabbage, ground beef, and sausage until fully incorporated.

Stir in the chicken broth and bring the mixture to a simmer over medium-high heat.

Reduce the heat to medium-low. Cover and cook, stirring occasionally, until the cabbage is tender, 25 to 30 minutes.

Stir in the cider vinegar and kosher salt.
