Ingredients

  • 50 g Textured soy protein
  • 150 ml Water (Hot)
  • 2 tbsp Soy sauce or tamari
  • 1 tbsp Tomato paste
  • 1 tbsp Paprika
  • 1 tsp Dried Herbes de Provence (The source spells this as dried provence herbs.)
  • 1 tbsp Steak spices
  • 4 tbsp Cornstarch (The source gives buckwheat flour as an alternative.)
  • 1 tbsp Cooking oil (For grilling the patties; included from the cooking instructions.)
  • 2 Burger buns
  • 4 slices Vegan cheese slices (One slice for each patty.)
  • 0.5 Romaine lettuce (Wash and chop.)
  • 1 Tomato (Wash and chop.)
  • 0.5 Onion (Slice into rings.)
  • 1 Cornichon (Slice into rings.)
  • 2 tbsp Pepperoncini (Chop.)

Steps

  1. 1

Place the textured soy protein in a bowl. Pour over the hot water and let it rehydrate for 2–3 minutes, until the water has been completely absorbed.

  2. 2

Add the soy sauce or tamari, tomato paste, Herbes de Provence, paprika, and steak spices. Mix thoroughly. The mixture will resemble vegetable mince, but it will not yet be firm enough to shape into steaks.

  3. 3

Add the cornstarch, or use buckwheat flour instead as the source suggests. Mix until evenly incorporated and the mixture holds together.

  4. 4

Divide the mixture into four portions. Shape each portion into a very thin, flattened steak or patty.

  5. 5

Heat the oil in a frying pan over medium-high heat. Place the patties in the pan and grill for about 3 minutes on each side, until browned and firm enough to turn.

  6. 6

Place one vegan cheese slice on each patty. Cover the pan with a lid and cook over medium heat for 4–5 minutes, until the cheese has melted.

  7. 7

While the patties cook, toast the burger buns. Wash and chop the lettuce and tomato, slice the onion and cornichon into rings, and chop the pepperoncini.

  8. 8

Assemble each burger with sauces of your choice, two patties per serving, lettuce, tomato, cornichon, onion, and pepperoncini.

  9. 9

Serve immediately with a salad, fries, sweet-potato fries, smiley potatoes, or another side of your choice.

Notes

The original recipe lists cornstarch, with buckwheat flour offered as an alternative in the instructions. The source also suggests serving the burgers with salad, fries, sweet-potato fries, or smiley potatoes.
