Ingredients

  • 1 tbsp olive oil
  • 1 lb kielbasa (sliced)
  • 1 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 2 carrots (sliced)
  • 5 medium potatoes (peeled and cubed)
  • 1 tsp sweet paprika
  • 1 tsp dried marjoram
  • 14 oz white beans (drained; 14 oz is the can size as stated)
  • 5 cup chicken broth
  • 0.5 cup cream cheese
  • 0.5 tsp black pepper
  • 2 tbsp fresh dill (chopped)
  • salt (to taste)

Steps

  1. 1

Heat the olive oil in a large pot over medium heat. Add the sliced kielbasa and brown it for about 5 minutes.

  2. 2

Remove the browned kielbasa from the pot and set it aside.

  3. 3

Add the diced onion, minced garlic, and sliced carrots to the same pot. Sauté for 3 minutes.

  4. 4

Add the cubed potatoes, drained white beans, sweet paprika, and dried marjoram to the pot.

  5. 5

Pour in the chicken broth and bring the soup to a boil.

  6. 6

Lower the heat, cover the pot, and simmer for about 15 minutes, until the potatoes are tender.

  7. 7

Stir in the cream cheese until it has melted and the broth is creamy.

  8. 8

Return the kielbasa to the pot.

  9. 9

Season with salt and black pepper, then finish with the chopped fresh dill.
