Ingredients

  • 4 low carb tortillas
  • 1 cup fully cooked chicken (shredded or finely chopped)
  • 0.5 block cream cheese (4 oz; softened)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup buffalo sauce
  • 2 tbsp ranch seasoning (dry mix)
  • 2 tbsp butter (melted)

Steps

  1. 1

In a medium mixing bowl, combine the cooked chicken, cream cheese, shredded cheddar, buffalo sauce, and ranch seasoning.

  2. 2

Mix the ingredients thoroughly until the chicken is evenly coated and the cream cheese is well incorporated.

  3. 3

Lay out the 4 low carb tortillas on a flat surface.

  4. 4

Spread an equal amount of the chicken mixture onto each tortilla.

  5. 5

Roll each tortilla tightly to form the taquitos.

  6. 6

Brush the outside of each rolled tortilla with the melted butter.

  7. 7

Place the taquitos in the air fryer basket.

  8. 8

Air fry at 400°F (200°C) for 8-10 minutes until the tortillas are golden brown and crispy.

  9. 9

Remove from the air fryer and serve immediately.

Notes

Pro tip: You can also fry these in oil for extra crispiness. If the tortillas are stiff, microwave them for 10-15 seconds before rolling to prevent cracking.
