An incredibly moist and tender banana bread with an upside-down caramelized banana base and mini chocolate chips.

Ingredients

  • 3 very ripe bananas (mashed)
  • 240 g all-purpose flour
  • 200 g light brown sugar
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 2 large eggs
  • 180 ml neutral oil
  • 120 g Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.33 cup mini chocolate chips
  • bananas for the topping (enough to cover the bottom of the pan)
  • 150 g white sugar (for the caramel)
  • 20 ml water (for the caramel)

Steps

    Preheat the oven to 350°F (175°C).

    Slice the topping bananas in half lengthwise and place them flat side down, covering the bottom of a loaf pan.

    In a small saucepan, heat the 150g of sugar with the 20ml of water until it caramelizes and turns an amber color.

    Pour the hot caramel evenly over the bananas in the pan and set aside.

    In a large bowl, mash the 3 very ripe bananas.

    Add the brown sugar and neutral oil to the mashed bananas and mix until combined.

    Add the 2 eggs and Greek yogurt, whisking the mixture well.

    Slowly incorporate the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, and vanilla), mixing gently to keep the batter tender.

    Gently fold the mini chocolate chips into the batter.

    Pour the batter over the caramelized bananas in the pan.

    Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.

    Allow to cool briefly before carefully inverting the pan so the banana side is on top.

Notes

The author mentions that nuts can be added to the batter if there are no allergies. Baking time may vary depending on the oven; always check using the toothpick test.
